
Green Olive Sauce
Sauces have always played an important and basic role in cooking. A great variety of sauces helps give great flavour to many ingredients. This particular green olive sauce is served with grilled pork loin, fried pork ribs and also a boiled ´longaniza’ sausage or a fried, black ‘butifarra’ sausage.
Ingredients for 4 persons
1 large onion, diced
¼ kilo of ripe tomatoes, diced
3 FRAGATA garlic cloves, chopped finely
2 leaves of parsley, chopped
½ cup of white wine
3 pinches of pepper
100 grams of LORETO green olives, chopped finely
1 cup of water
LORETO extra virgin olive oil
salt
Preparation
In a large, somewhat deep frying pan, add the LORETO extra virgin olive oil and sauté the chopped LORETO garlic. Stir and make sure it does not burn, then add the onion and parsley. Let this simmer and stir now and again so the mix cooks evenly.
When it is almost finished, we add the wine, tomato, water, salt, pepper and the LORETO olives. Let this cook over low heat for about 15 minutes. Serve with whatever meat you deem appropriate.
Tips
Go easy on the salt because olives provide the salty taste that is needed. Be careful not to burn the garlic. It cooks quickly because diced garlic sautés easily. Try this sauce and you certainly make it again someday.
