Roasted Pumpkin Risotto with Haloumi and Chilli
Rice with Mutti Finely Chopped Tomatoes
Ingredients (for 4 servings)
400g of Basmati rice
300g Mutti Finely Chopped Tomatoes
100g Extra virgin olive oil
2g Mustard seeds
3 Green peppers (slice in round pieces)
3 Curry leaves
1g Curcuma / Turmeric
50g Peanuts
Preparation
In a frying pan, Saute mustard seeds in oil for 2 minutes.
Then add Curcuma, peanuts, green peppers, curry leaves, and Mutti Finely Chopped Tomatoes and cook for 15 minutes
Boil the rice, then mix it with the sauce and serve.
