Roasted Pumpkin Risotto with Haloumi and Chilli
Cheese Cake
Ingredients
1,2 kg spread cheese like Philadelphia,
200 g fresh cream unsweetened,
3 eggs and 2 egg yolks,
200 g sugar,
30 g cornstarch,
a pinch of salt,
1 lemon juice,
vanilla,
Toschi Amarena cherries in syrup.
For the base
250 g biscuits, 100 g butter, 15 g baking powder.
Preparation
Crumble the biscuits finely and mix them with melted butter and baking powder. Spread the mixture into a buttered cake tin to obtain a uniform layer. In a separate bowl beat eggs with the yolks, mixing thoroughly, then gradually add in the order sugar, salt, lemon juice, vanilla, cheese, corn starch and then the fresh cream not mounted. Pour the mixture into the cake tin, on the basis of biscuits, and bake in the oven at 160 degrees for about 50 minutes. Garnish with Amarena cherries and serve cold.
