Courgette Pancakes

Makes approx. 15 pancakes 

Ingredients 

  • 450 g courgettes 
  • 90 g all-purpose or 00 flour 
  • 2 eggs 
  • 2 tbsp Olitalia ORO 100% Italian extra virgin olive oil 
  • Salt, to taste 
  • Freshly ground black pepper, to taste 

For the topping 

  • Olitalia ORO extra virgin olive oil, to taste 
  • Goat cheese spread, to taste 
  • Cherry tomatoes, to taste

Method 

  1. Cut the courgettes into chunks and place them in a bowl. Add the eggs and blend using a hand blender until smooth. 
  2. Add the flour to the courgette mixture, season with salt and pepper, and drizzle in the Olitalia ORO extra virgin olive oil. 
  3. Whisk well until you obtain a smooth, thick batter. 
  4. Heat a non-stick pan with a little olive oil. 
  5. Using an ice-cream scoop, portion the batter into the pan and cook the pancakes on medium heat until golden on both sides. 

Food Plating 

Serve the courgette pancakes warm and top with goat cheese spread and fresh cherry tomatoes. Finish with a light drizzle of Olitalia ORO
